Chocolate Marshmallow Sandwich Cookies

Yields: 25 servings

Ingredients
1 1/3 c.

all-purpose flour

1/2 c.

unsweetened cocoa powder

1/4 tsp.

baking soda

1/4 tsp.

kosher salt

1/2 c.

unsalted butter, at room temp

1/2 c.

sugar

2 tbsp.

pure vanilla extract

Directions
  1. In a bowl, whisk together flour, cocoa, baking soda, and salt. Using an electric mixer, beat butter, sugar, and vanilla in a large bowl until fluffy, about 3 minutes. Beat in egg. Reduce speed to low and add flour mixture, mi until just incorporated.
  2. Divide dough in half. Roll each half between 2 sheets parchment paper until ⅛ in. thick. Refrigerate until firm, at least 30 minutes. 
  3. Line baking sheets with parchment. Cut out X and O shapes and transfer to prepared baking sheets. Reroll, chill, and cut scraps.
  4. Heat oven to 350°F. Bake, rotating baking sheets halfway through, until set, 8 to 10 minutes. Cool 5 minutes on baking sheets before transferring to wire racks to cool completely. Sandwich with marshmallow cutouts.
