Ingredients
1 1/2 c.

apple cider

1 c.

 packed dark brown sugar

1/2 c.

 (1 stick) unsalted butter, cut into small pieces

1/2 c.

heavy cream

Kosher salt

Directions
  1. In a medium high-sided saucepan, bring cider to a boil, then reduce heat and simmer until reduced to about 1/4 cup, 10 to 15 minutes. 
  2. Add sugar, butter, cream, and 1/4 teaspoon salt and bring to a boil, then reduce heat and simmer vigorously, stirring occasionally, until thickened and shiny and a candy thermometer reads between 225°F and 230°F, 7 to 10 minutes.
