This was supposed to be a quiche, but I just couldn't bring myself to call it that. A quiche is a ladies-who-lunch kind of thing; this was robust, with garlicky sausage and shredded Cheddar. I also accidentally omitted the cream, so the texture was much firmer than a quiche. It was a filling breakfast, though, and good.
It started with a store-bought pie crust, which I find are much better for savory dishes than for sweet. I lined the pie plate with it, then mixed 6 eggs and a bit of salt with 2 diced garlic-and-herb chicken sausage. I poured that into the lined pie plate, then shredded Cheddar cheese over the top. Baked for 20 minutes or so, until the eggs were firm and the crust browned. I was planning to serve this for dinner, with a baguette and green salad. For breakfast we had a fruit salad.
