I'm looking for the quick fix and discovering that it's not just about a meal that's quick to prepare. Planning, shopping, cleaning up—all that stuff matters, too. We've been busy lately, and we're about to get even busier, so I have been turning to reliable dishes made from ingredients I always have on hand. Eggs, tortillas, salsa and cheese are always in my fridge, so we had breakfast burritos for dinner last night. It's not creative, but it's easy. We all need a little easy, right?
I started the potatoes first (which I don't always have, but they were a nice addition). I used red potatoes and cut them in 1-inch cubes. Heated a generous layer of canola oil in the bottom of my small skillet, then added the potatoes along with salt and pepper. I turned them every couple of minutes. Then I scrambled eggs with salt and pepper. While those two things were cooking, I shredded cheese, set out salsa and heated flour tortillas in the microwave. Near the end of their cooking time, I tossed the potatoes with cumin and ancho chile powder, then cooked a couple minutes more.
These recipes are all quick to prepare and are made from ingredients I have in my kitchen on a regular basis. The peanut noodles are already part of my rotation:
