It's not always about the food, is it? Sometimes there are bigger things going on and food is an afterthought. To tell the truth, yesterday none of us felt much like eating at all. I didn't, however, want an excuse to make a midnight ice cream raid, and I certainly didn't want other members of the family to show up beside my bed in the late night wailing, "I'm huuuuungry." So we sat down to plates full of simple food and we ate well, if a little mechanically.
This meal actually made all of us pretty happy, me included. It was so easy to make and so straightforward that the kids loved it. I boiled the noodles in salted water, throwing in frozen haricots vert for the last 5 minutes of the noodle cooking time. When they were done, I drained them and tossed them with a little bit of butter. (I hate it when the kids order buttered noodles in a restaurant and they're dripping with butter, don't you?)
Chicken tenders, salt and pepper. Cooked on each side over medium heat for 4 minutes, until no longer pink in the center.
