The oven is not going on this week, which makes today's post the perfect opportunity to share a technique for making ice cream without an ice cream machine, from Can It, Bottle It, Smoke It by Karen Solomon. The ice cream is a little icy but so easy; it would be a good summer project with the kids.
The ice cream mixture starts with a simple syrup: 1 cup each sugar and water, mixed together over medium heat in a saucepan until the sugar is dissolved. Let that cool, then mix it with 1/2 cup each heavy cream and milk. Mix in 3 tablespoons Dutch-process cocoa powder, 1/4 teaspoon vanilla extract and a pinch of salt. Pour into a freezer-safe bowl (mine's Pyrex) and freeze for 2 hours.
After 2 hours, take the mixture out of the freezer and mix on low speed for 15 seconds. Put it back in the freezer, then an hour later repeat. Do that 2 more times, then serve. You can make other flavors using this technique, too:
