Hello, Grandma and Grandpa. Since moving to California less than a month ago, we have played host to all the Colorado grandparents. My parents have stopped by this weekend on their way home from Hawaii; it seems that whenever they're around we have tacos. Honestly, it's something I can make from ingredients I usually have on hand, and after a day of sightseeing I didn't want to go to the grocery store.
I cooked some ground beef in a skillet, then added cumin, chile powder, salt and oregano; I added a bit of water to the skillet to make a sauce out of the spices. I shredded cheese and lettuce, warmed flour tortillas and set out some salsa. Too simple, right?
Watermelon, cut into sticks and sprinkled with chile powder and lime juice, would be a nice side. And still, no silverware necessary!

Oh, and happy birthday, Martin Luther King, Jr. It's hard to explain to my 5-year-old son the magnitude of your accomplishments, and I think that's a credit to you. Here's a bit from MLKJ's famous speech.
